Crispy Chicken Bacon Ranch Tortilla Pockets

Eight folded flour tortilla pockets filled with cooked chicken, bacon, cream cheese and ranch seasoning, baked in a round pan with garlic butter and mozzarella.
Prep Time 12 minutes
Cook Time 20 minutes
Total Time 35 minutes (includes 3 minutes cooling)
Servings: 8 tortilla pockets

Ingredients

  • 8 small (6-inch / fajita-size) soft flour tortillas
  • 2 cups cooked, finely shredded chicken (rotisserie chicken works great)
  • 4 ounces (½ block) cream cheese, softened and cubed/crumbled
  • ½ cup cooked crispy bacon, finely crumbled
  • 1 tablespoon dry ranch seasoning mix
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon garlic powder
  • 1 ½ to 2 cups shredded low-moisture mozzarella cheese
  • 1 teaspoon dried Italian seasoning or dried oregano (for topping)

Method

  1. Preheat the oven to 350°F (175°C). For the optional crisper-edge version, use 375°F. Lightly grease a 10-inch round fluted tart pan, pie dish or oven-safe cast-iron skillet.
  2. Wrap the eight small flour tortillas in a damp paper towel and microwave for 15 seconds, until warm and pliable.
  3. In a medium bowl, combine the cooked shredded chicken, dry ranch seasoning, cooked crumbled bacon and softened cream cheese. Alternatively, divide these four filling ingredients evenly among the tortillas and layer them directly in the centers.
  4. Lay each warm tortilla flat. Divide the filling evenly among the eight tortillas, using roughly ⅓ cup per pocket as a guide. Fold the bottom edge up over the filling, then bring the left and right sides inward so the flaps overlap and form a three-sided pocket. Press the overlapping folds gently together.
  5. Arrange all eight pockets in a circular star pattern in the prepared pan, with their pointed tips facing the center. Set them close enough to support the folds without forcing the filling out.
  6. Stir the melted butter and garlic powder together. Brush the mixture over the tops and folded seams of the tortillas.
  7. Scatter the mozzarella evenly over the pockets and sprinkle with the dried Italian seasoning or oregano.
  8. Bake for about 20 minutes, until the tortillas are crisp at the edges, the cheese is melted and bubbling, and the chicken filling reaches 165°F in the center. Continue baking if the center needs more time. For an optional browned finish, broil on HIGH for up to 1 minute while watching constantly, but only in a pan explicitly rated for broiler use. Do not broil a glass pie dish; skip this finish if your pan is not broiler-safe.
  9. Let the pockets cool in the pan for 3 minutes, then lift or gently pull the wedges apart and serve warm. Optional broiling adds about a minute to the base cooking time.

Notes

Makes 8 tortilla pockets. Start with cooked chicken and cooked bacon. Warm tortillas for 15 seconds before folding. Bake at 350°F (175°C); 375°F is the supplied optional crisper-edge setting. About 20 minutes baking, with the center of the chicken filling reaching 165°F. Cool in the pan for 3 minutes. Total time: 35 minutes including cooling, plus any optional broil finish or extra time needed for the filling to heat through. Optional broil: HIGH for up to 1 minute, watched constantly, only in a pan explicitly rated broiler-safe. Never broil a glass pie dish. Use 6-inch tortillas and divide the filling evenly; roughly ⅓ cup is a guide. Refrigerate leftovers promptly and use within 3 to 4 days. Reheat to 165°F throughout; air fryer 360°F for 3–4 minutes or oven 375°F for about 7 minutes are starting estimates. Optional bottled-ranch variation: replace cream cheese and dry ranch seasoning with ⅓ cup thick bottled ranch; the filling will be looser. Optional dips: buttermilk ranch, buffalo sauce or marinara.
