Small tortillas make these pockets work. Each one folds around a creamy chicken, bacon and ranch filling, then sits point-inward beside the next in a round pan. Garlic butter coats the folds, and mozzarella melts across the whole wheel.
The chicken and bacon are already cooked, so this is a good place to use a rotisserie chicken and cooked bacon you have on hand. Set the finished pan on a trivet and serve the pockets warm, with ranch, buffalo sauce or marinara on the side if you like.
Warm Tortillas Are Easier to Fold
A cold tortilla can split when you bend three edges toward the center. Warm the stack under a damp paper towel for the stated 15 seconds, then work while the tortillas are flexible. You want enough room around the filling for the edges to overlap.
Divide the filling among all eight tortillas before you start folding. Roughly ⅓ cup per pocket is a guide, not a reason to force an overfilled tortilla shut. Keep the portions even and the filling in the middle.
Ingredients for Chicken Bacon Ranch Tortilla Pockets
- 8 small (6-inch / fajita-size) soft flour tortillas
- 2 cups cooked, finely shredded chicken (rotisserie chicken works great)
- 4 ounces (½ block) cream cheese, softened and cubed/crumbled
- ½ cup cooked crispy bacon, finely crumbled
- 1 tablespoon dry ranch seasoning mix
- 3 tablespoons unsalted butter, melted
- ½ teaspoon garlic powder
- 1 ½ to 2 cups shredded low-moisture mozzarella cheese
- 1 teaspoon dried Italian seasoning or dried oregano (for topping)
Soften the cream cheese before mixing so it spreads through the shredded chicken instead of staying in large cold pieces. Finely crumbled bacon is easier to distribute in these small pockets. The dry ranch seasoning flavors the filling without adding a pourable dressing.
Fold, Arrange and Bake
- Preheat the oven to 350°F (175°C). For the optional crisper-edge version, use 375°F. Lightly grease a 10-inch round fluted tart pan, pie dish or oven-safe cast-iron skillet.
- Wrap the eight small flour tortillas in a damp paper towel and microwave for 15 seconds, until warm and pliable.
- In a medium bowl, combine the cooked shredded chicken, dry ranch seasoning, cooked crumbled bacon and softened cream cheese. Alternatively, divide these four filling ingredients evenly among the tortillas and layer them directly in the centers.
- Lay each warm tortilla flat. Divide the filling evenly among the eight tortillas, using roughly ⅓ cup per pocket as a guide. Fold the bottom edge up over the filling, then bring the left and right sides inward so the flaps overlap and form a three-sided pocket. Press the overlapping folds gently together.
- Arrange all eight pockets in a circular star pattern in the prepared pan, with their pointed tips facing the center. Set them close enough to support the folds without forcing the filling out.
- Stir the melted butter and garlic powder together. Brush the mixture over the tops and folded seams of the tortillas.
- Scatter the mozzarella evenly over the pockets and sprinkle with the dried Italian seasoning or oregano.
- Bake for about 20 minutes, until the tortillas are crisp at the edges, the cheese is melted and bubbling, and the chicken filling reaches 165°F in the center. Continue baking if the center needs more time. For an optional browned finish, broil on HIGH for up to 1 minute while watching constantly, but only in a pan explicitly rated for broiler use. Do not broil a glass pie dish; skip this finish if your pan is not broiler-safe.
- Let the pockets cool in the pan for 3 minutes, then lift or gently pull the wedges apart and serve warm. Optional broiling adds about a minute to the base cooking time.
The Pan Matters for the Final Finish
A 10-inch round pan gives the eight small pockets somewhere to sit together while they bake. Use an oven-safe pan and check its temperature rating. A nonstick coating or a metal rim does not automatically mean the pan can go under a broiler.
The bubbling mozzarella is a useful surface cue, but the filling needs to be hot too. A food thermometer lets you check the chicken in a center pocket without waiting for the tortillas to become too dark.
If you use a glass pie dish, keep to oven baking and skip the broiler. Pyrex’s bakeware guidance specifically rules out use under a broiler. The pockets do not need that optional finish to be served.
Keep the Edges Crisp When Reheating
Transfer leftovers to shallow, covered containers and refrigerate within 2 hours, or within 1 hour if the temperature is above 90°F. Use them within 3 to 4 days. These limits follow USDA leftover-storage guidance.
For reheating, the suggested starting points are an air fryer at 360°F for 3 to 4 minutes or an oven at 375°F for about 7 minutes. The time depends on the size and starting temperature of the pockets; continue until the filling reaches 165°F throughout. A microwave will soften the tortilla more than dry heat. The temperature check follows USDA reheating guidance.
A Couple of Filling Questions
Can I use bottled ranch dressing?
The main recipe uses cream cheese and dry ranch seasoning. For the optional bottled-dressing variation, replace those two ingredients with ⅓ cup thick ranch dressing. Expect a looser filling and take care not to overfill the tortillas. Keep the cream-cheese version if you want the thicker filling shown in the main method.
What should I serve for dipping?
Cool buttermilk ranch, buffalo wing sauce and marinara are all serving options. Put a small bowl beside the pan and let people add their own; the pockets already contain ranch seasoning.
