- 2 pounds lean ground beef
- Salt and pepper to taste
- 2 tbsp chopped onion
- 2 tbsp red bell pepper, chopped
- 2 tbsp green bell pepper, chopped
- ½ cup ketchup
- 3 tbsp Worcestershire Sauce
- 2 tsp light brown sugar
- 1 tsp onion powder
- 2 cups cheddar cheese, shredded
- ⅓ cup milk
- 1 tbsp butter
- 1 cup cheddar cheese (additional for sprinkling)
- Large tortillas
- 3 tbsp oil (for frying)
Instructions
- Brown the ground beef in a skillet, adding the chopped green and red bell peppers, onion, and a pinch of salt and pepper. Cook until the beef is browned and vegetables are soft. Drain excess fat.
- In a small bowl, mix together the ketchup, Worcestershire sauce, brown sugar, and onion powder. Stir well and add to the beef mixture, cooking for a few minutes until the sauce thickens.
- In a saucepan, melt the shredded cheddar cheese, milk, and butter over low heat until smooth to make the cheese sauce.
- Lay out the tortillas and spoon a generous amount of the sloppy joe mixture in the center of each. Top with a spoonful of cheese sauce.
- Roll the tortillas into burritos, folding in the sides as you roll.
- Heat oil in a skillet over medium heat. Fry the burritos seam-side down, about 1-2 minutes per side, until golden brown.
- Sprinkle with extra shredded cheddar cheese and serve warm.
Notes
- For extra flavor, add hot sauce or diced jalapeños to the sloppy joe mixture.
- You can make the burritos ahead of time and freeze them. Reheat in a skillet for a crispy exterior.
- Serve with sour cream, salsa, or guacamole on the side for dipping.
