  • Total Time: 45 minutes
  • Yield: 6 burritos 1x

Ingredients

Scale
  • 2 pounds lean ground beef
  • Salt and pepper to taste
  • 2 tbsp chopped onion
  • 2 tbsp red bell pepper, chopped
  • 2 tbsp green bell pepper, chopped
  • ½ cup ketchup
  • 3 tbsp Worcestershire Sauce
  • 2 tsp light brown sugar
  • 1 tsp onion powder
  • 2 cups cheddar cheese, shredded
  • ⅓ cup milk
  • 1 tbsp butter
  • 1 cup cheddar cheese (additional for sprinkling)
  • Large tortillas
  • 3 tbsp oil (for frying)

Instructions

  • Brown the ground beef in a skillet, adding the chopped green and red bell peppers, onion, and a pinch of salt and pepper. Cook until the beef is browned and vegetables are soft. Drain excess fat.
  • In a small bowl, mix together the ketchup, Worcestershire sauce, brown sugar, and onion powder. Stir well and add to the beef mixture, cooking for a few minutes until the sauce thickens.
  • In a saucepan, melt the shredded cheddar cheese, milk, and butter over low heat until smooth to make the cheese sauce.
  • Lay out the tortillas and spoon a generous amount of the sloppy joe mixture in the center of each. Top with a spoonful of cheese sauce.
  • Roll the tortillas into burritos, folding in the sides as you roll.
  • Heat oil in a skillet over medium heat. Fry the burritos seam-side down, about 1-2 minutes per side, until golden brown.
  • Sprinkle with extra shredded cheddar cheese and serve warm.

Notes

  • For extra flavor, add hot sauce or diced jalapeños to the sloppy joe mixture.
  • You can make the burritos ahead of time and freeze them. Reheat in a skillet for a crispy exterior.
  • Serve with sour cream, salsa, or guacamole on the side for dipping.
