Busy Day Soup is the ultimate go-to for quick, hearty meals. Made with ground beef or turkey, a variety of mixed vegetables, and seasoned broth, this soup is easy to whip up and perfect for those busy nights when you want a comforting dish with minimal prep. It’s versatile, delicious, and can be ready in less than an hour!

  • Total Time: 40 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 onion, chopped
  • 2 cans mixed vegetables, drained
  • 1 can diced tomatoes
  • 1 can tomato soup
  • 4 cups beef broth
  • Salt, pepper, and garlic powder, to taste

Instructions

  • In a large pot or Dutch oven, brown the ground beef (or turkey) and chopped onion over medium heat until the meat is fully cooked. Drain any excess fat.
  • Add the drained mixed vegetables, diced tomatoes, tomato soup, and beef broth to the pot.
  • Season with salt, pepper, and garlic powder to taste.
  • Stir well, then bring the mixture to a simmer. Allow to cook for 20-30 minutes, stirring occasionally, until heated through and flavors are well blended.
  • Serve hot and enjoy!

Notes

  • For extra flavor, add a bay leaf while the soup simmers and remove before serving.
  • Feel free to substitute or add fresh vegetables, such as diced potatoes, green beans, or corn.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer storage.
