- 1 lb ground beef or turkey
- 1 onion, chopped
- 2 cans mixed vegetables, drained
- 1 can diced tomatoes
- 1 can tomato soup
- 4 cups beef broth
- Salt, pepper, and garlic powder, to taste
Instructions
- In a large pot or Dutch oven, brown the ground beef (or turkey) and chopped onion over medium heat until the meat is fully cooked. Drain any excess fat.
- Add the drained mixed vegetables, diced tomatoes, tomato soup, and beef broth to the pot.
- Season with salt, pepper, and garlic powder to taste.
- Stir well, then bring the mixture to a simmer. Allow to cook for 20-30 minutes, stirring occasionally, until heated through and flavors are well blended.
- Serve hot and enjoy!
Notes
- For extra flavor, add a bay leaf while the soup simmers and remove before serving.
- Feel free to substitute or add fresh vegetables, such as diced potatoes, green beans, or corn.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer storage.
