One Pot Lasagna Soup: The Ultimate Italian Comfort Bowl with Three-Cheese Excellence

A hearty, soul-warming soup that captures the essence of homemade lasagna. A savory blend of ground beef and Italian sausage is simmered with traditional herbs, balsamic vinegar, and a rich tomato base. Broken lasagna noodles cook directly in the broth, releasing starch to create a thick, silky texture that is best enjoyed topped with a dollop of creamy ricotta or melted mozzarella.

Ingredients
  

  • The Meats: 1 lb ground beef 1 lb ground Italian sausage.
  • The Base: 8 cups chicken broth 24 oz jar pasta sauce, 14 oz can diced tomatoes, 2 tbsp tomato paste.
  • Aromatics & Seasoning: 1 chopped onion 4 tsp minced garlic, 1 tsp sugar, 2 tsp balsamic vinegar, 2 tsp basil, 1 tsp oregano, 1 bay leaf, salt and pepper.
  • The Pasta: 10 lasagna noodles broken into bite-sized pieces.
  • Toppings: Parmesan mozzarella, or a dollop of ricotta cheese.

Method
 

  1. Brown: In a large heavy-bottomed pot or Dutch oven, cook the ground beef, Italian sausage, and chopped onion over medium-high heat until the meat is fully browned. Drain off any excess fat.
  2. Aromatics: Return the pot to the heat and stir in the minced garlic. Sauté for about 30 seconds until fragrant.
  3. The Broth: Pour in the pasta sauce, diced tomatoes, tomato paste, and chicken broth. Stir in the sugar, balsamic vinegar, basil, oregano, bay leaf, salt, and pepper.
  4. Boil & Break: Cover the pot and bring the mixture to a boil. While waiting, break your dry lasagna noodles into small, uneven pieces.
  5. Simmer: Add the noodle pieces to the pot. Reduce the heat to medium-low and simmer, stirring occasionally to prevent the noodles from sticking together, until the pasta is tender (usually 10–12 minutes).
  6. Serve: Remove the bay leaf. Ladle into bowls and top generously with cheese.

Notes

  • The "Ricotta Dollop": For the most authentic lasagna experience, stir together ½ cup ricotta, ¼ cup Parmesan, and a pinch of salt. Place a large spoonful in the center of each bowl just before serving.
  • Noodle Storage: If you plan on having leftovers, the noodles will continue to absorb broth as they sit. You may want to cook the noodles separately and add them to individual bowls, or simply add a splash of broth when reheating the next day.
  • Sausage Selection: Use "Hot" Italian sausage if you want a spicy kick, or "Sweet" for a milder, more family-friendly soup.
