Step 1: Prepare the Dough
In a large mixing bowl, combine the white cake mix, eggs, and vegetable oil.
Stir until a sticky dough forms.
Add the Kelly green gel food coloring and mix until the dough is evenly colored.
Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.
Step 2: Preheat & Prepare
Preheat your oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Place the granulated sugar in one small bowl and the powdered sugar in another.
Step 3: Shape & Coat the Cookies
Use a tablespoon-sized cookie scoop to portion out the dough.
Roll each scoop into a smooth ball between your hands.
Roll each dough ball in the granulated sugar first, then in the powdered sugar until fully coated.
Step 4: Bake & Cool
Place the cookie dough balls on the prepared baking sheet, spacing them 2 inches apart.
Bake for 9-12 minutes, until the cookies spread slightly and the tops crackle.
Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Step 5: Serve & Enjoy!
Once cooled, serve your festive St. Patrick’s Day cookies with a cup of tea or milk.
