Broccoli and Cheese Stuffed Chicken: The Ultimate Restaurant-Quality Breast with Cheddar-Cream Cheese Excellence

Ingredients
  

  • The Chicken: 4 boneless skinless chicken breasts 1 tbsp olive oil.
  • The Seasoning: 2 tsp Italian seasoning 1 tsp garlic powder, ½ tsp onion powder, salt and pepper (to taste).
  • The Filling: 250g chopped broccoli florets ½ cup shredded cheddar, ¼ cup low-fat cream cheese, 1 tbsp Dijon mustard, 1 minced garlic clove.

Method
 

  1. Steam: Place finely chopped broccoli and 2 tbsp of water in a microwave-safe bowl. Cover with plastic wrap and microwave on high for 2–3 minutes until tender. Drain well.
  2. Prep Chicken: Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
  3. Season: Rub the outside of the chicken breasts liberally with the Italian seasoning, garlic powder, onion powder, salt, and pepper.
  4. The Mix: In a medium bowl, combine the steamed broccoli, cheddar, cream cheese, Dijon mustard, and minced garlic. Stir until well combined.
  5. Stuff: Distribute the broccoli-cheese mixture equally into the chicken pockets. Secure the edges with toothpicks to keep the filling inside.
  6. Sear: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until browned.
  7. Bake: Preheat oven to 400°F (200°C). Cover the skillet with foil and transfer to the oven. Bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
  8. Serve: Remove toothpicks before serving. Pair with a side salad, garlic green beans, or roasted potatoes.

Notes

  • The "Sealing" Trick: If you don't have toothpicks, you can use a couple of dry spaghetti noodles to pin the chicken shut—they'll soften during baking but keep the pocket closed.
  • Flavor Boost: Adding a pinch of smoked paprika to your dry rub (as mentioned in your preparation) gives the chicken a deeper, more "rotisserie-style" color and flavor.
  • Skillet Safety: Ensure your skillet is truly oven-safe (like cast iron or stainless steel with metal handles) before moving it from the stove to the 400°F oven.
