For the Quesadillas:
- 4 medium tortillas (flour, whole wheat, or gluten-free)
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 2 tablespoons olive oil or butter for cooking
Optional Add-ins:
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup black olives, sliced
- 1/2 cup cooked grilled chicken, dic
Instructions
Start by rinsing and chopping the fresh spinach. Crumble the feta cheese into a bowl, ensuring it’s evenly distributed for easy assembly. If you’re using optional add-ins such as sun-dried tomatoes or grilled chicken, prepare them now.
2. Assemble the Quesadillas
Lay a tortilla flat on a clean surface. Evenly spread the chopped spinach and crumbled feta on one half of the tortilla. If you’re adding extras, sprinkle them on top. Fold the tortilla in half, pressing gently to ensure it stays closed while cooking.
3. Cook the Quesadillas
Heat a non-stick skillet over medium heat and add a small amount of olive oil or butter. Place the folded tortilla in the skillet and cook for 2-3 minutes on each side until golden brown and crispy. Repeat the process for additional quesadillas.
4. Slice and Serve
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Use a sharp knife or pizza cutter to slice it into wedges. Serve warm with your favorite dips or sides.
