Instructions
- Make the Graham Cracker Crust: In a medium bowl, mix graham cracker crumbs and sugar. Pour in melted butter and stir until the mixture resembles wet sand. Press firmly into the bottom and slightly up the sides of a 9-inch pie dish. Place in the refrigerator to chill while preparing the filling.
- Prepare the Peanut Butter Base: In a large mixing bowl, combine peanut butter and powdered sugar. Beat until thick, smooth, and fully blended. This step is important — it creates the signature Amish “crumbly-then-creamy” texture.
- Add the Cream Cheese: Add softened cream cheese and vanilla extract to the peanut butter mixture. Beat until smooth, creamy, and free of lumps.
- Whip the Cream: In a separate chilled bowl, whip the heavy cream until stiff peaks form. Do not overwhip — it should be fluffy, not grainy.
- Fold Everything Together: Gently fold the whipped cream into the peanut butter mixture in two additions. Use a spatula and slow movements to keep the filling light and airy.
- Assemble the Pie: Spoon the peanut butter filling into the chilled crust. Smooth the top with a spatula. Cover loosely and refrigerate for at least 4 hours, preferably overnight.
