Mounds Brownies: The Ultimate Chocolate Coconut Bar with Candy-Inspired Layered Excellence

Description

Rich, fudgy brownies topped with a sweet coconut layer and finished with smooth chocolate frosting – just like the classic Mounds candy bar in brownie form!

  • Total Time: 1 hour 45 minutes (includes cooling time)
  • Yield: 24 brownies 1x

Ingredients

Scale
  • For the Base
  • 1 brownie mix (9×13 size)
  • Ingredients called for on brownie mix box (typically eggs, oil, and water)
  • For the Coconut Layer
  • 5 cups shredded coconut
  • 1 can sweetened condensed milk (14 oz)
  • 1 cup powdered sugar
  • For the Topping
  • 1 container chocolate frosting (16 oz)

Instructions

  1. Prepare the Brownies
  2. Prepare the brownie mix according to package directions. Spread the batter evenly in a greased 9×13 inch baking pan. Bake as directed on the package until a toothpick inserted in the center comes out with moist crumbs.
  3. Make the Coconut Layer
  4. While the brownies are baking, combine the shredded coconut, sweetened condensed milk, and powdered sugar in a medium bowl. Mix thoroughly until all ingredients are well incorporated and you have a thick, sticky mixture.
  5. Add Coconut Layer
  6. As soon as you remove the brownies from the oven (while they’re still hot), carefully spread the coconut mixture over the top of the brownies. Use a spatula to gently spread it into an even layer, covering the entire surface.
  7. Prepare the Chocolate Topping
  8. Place the container of chocolate frosting in a microwave-safe bowl. Heat in the microwave for 20-30 seconds, or just until the frosting becomes pourable but not too hot. Stir until smooth.
  9. Finish the Brownies
  10. Pour the warm chocolate frosting over the coconut layer. Quickly spread it to cover the entire surface, making sure to seal the edges. This will help keep the coconut layer moist and prevent it from drying out.
  11. Cool and Set
  12. Allow the brownies to cool completely at room temperature, then refrigerate for at least 1 hour before cutting to allow all layers to set properly.

Notes

  • For best results, use sweetened shredded coconut rather than unsweetened to achieve the authentic Mounds candy flavor.
  • You can enhance the coconut layer by adding 1/2 teaspoon of almond extract for extra flavor.
  • If you prefer homemade brownies, any fudgy brownie recipe for a 9×13 pan will work as the base.
  • To make cutting easier, refrigerate the brownies for 1-2 hours before serving and use a knife dipped in hot water (then dried) for clean cuts.
