Ingredients
Scale
- Waffle Donut Batter
- 1/2 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon table salt
- 1 tablespoon cornstarch
- 1 large egg
- 1/3 cup milk
- 1/2 tablespoon oil
- 1 1/2 cups shredded apples
- Glaze
- 2 cups powdered sugar
- 3-4 tablespoons milk
- 1/2 teaspoon vanilla extract
- Cinnamon sugar (optional)
Instructions
- Preheat Waffle Iron
- Set your waffle iron to the appropriate temperature according to manufacturer instructions. Allow it to fully heat up before adding any batter to ensure proper cooking and prevent sticking.
- Mix Batter
- In a medium bowl, stir together all dry ingredients: flour, cinnamon, nutmeg, granulated sugar, baking powder, salt, and cornstarch until well combined. Add the egg, milk, and oil, whisking until the batter is smooth with no lumps. Gently fold in the shredded apples, ensuring they’re evenly distributed throughout the batter without overmixing.
- Cook Waffle Donuts
- Spray the preheated waffle iron with nonstick cooking spray to prevent sticking. Drop tablespoonfuls of batter onto the waffle iron, being careful not to overfill. Close the iron and cook for 3-5 minutes until the waffle donuts are golden brown and crisp around the edges. Carefully remove the mini donuts and place them on a wire rack to cool slightly.
- Prepare Glaze
- While the waffle donuts are cooling, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract in a medium bowl. Adjust the consistency by adding more milk if too thick or more powdered sugar if too thin. The glaze should be thick enough to coat the donuts but thin enough to drip off slightly.
- Glaze Donuts
- Once the waffle donuts are cool enough to handle but still warm, dip each one into the prepared glaze, ensuring even coverage on all sides. Turn them over to allow excess glaze to drip off back into the bowl. If desired, sprinkle with cinnamon sugar while the glaze is still wet. Place glazed donuts back on the wire rack to allow the glaze to set completely.
Notes
- For best results, use tart apples like Granny Smith or sweet-tart varieties like Honeycrisp.
- Squeeze excess moisture from shredded apples with a paper towel before adding to batter.
- These waffle donuts are best eaten the same day but can be stored in an airtight container for up to 2 days.
- You can add 1/4 teaspoon of apple pie spice for extra flavor.
- Mini waffle makers work perfectly for this recipe but regular waffle irons can be used as well.
