Hot Honey Beef & Cottage Cheese Sweet Potato Boats

For Sweet Potato Boats

  • 2 small sweet potatoes
  • 6 oz (170g) lean ground beef
  • 1/2 tsp salt
  • 1/2 tsp chili powder or smoked paprika
  • 2/3 cup cottage cheese
  • 1/2 ripe avocado, sliced
  • 2-3 tsp hot honey (or honey + chili flakes)
  • Black pepper to taste
  • Chili flakes (optional)

For Hot Honey Cucumber Crunch Salad

  • 1 large cucumber, thinly sliced
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1-2 tsp hot honey
  • Pinch of salt
  • Black pepper
  • 1 tsp olive oil
  • 1 tsp sesame seeds

 

Instructions

  1. Prepare Sweet Potatoes
    Preheat the oven to 400°F (200°C). Wash sweet potatoes thoroughly and prick several times with a fork. Place directly on the oven rack or on a baking sheet and bake for 40-50 minutes until very tender when pierced with a fork. Alternatively, microwave on high for 8-10 minutes, turning halfway through, until soft.
  2. Cook the Beef
    While the sweet potatoes are cooking, heat a non-stick skillet over medium-high heat. Add the ground beef, breaking it up with a wooden spoon. Season with salt and chili powder (or smoked paprika). Cook until browned and fully cooked through, about 5-7 minutes. Remove from heat.
  3. Assemble the Boats
    Once the sweet potatoes are done, cut them lengthwise down the middle. Use a fork to gently fluff the inside flesh. Season the inside of each potato with a pinch of salt and pepper. Divide the cooked beef evenly between the two potatoes, spooning it into the center of each.
  4. Add Toppings
    Top each potato with 1/3 cup of cottage cheese. Arrange avocado slices along the sides of each potato boat. Drizzle 1-1.5 teaspoons of hot honey over each filled potato. Finish with freshly ground black pepper and additional chili flakes if desired.
  5. Prepare Cucumber Salad
    In a medium bowl, combine the thinly sliced cucumber, rice vinegar, hot honey, salt, pepper, olive oil, and sesame seeds. Toss gently to ensure all cucumber slices are evenly coated. Let sit for 5 minutes before serving to allow flavors to meld.
  6. Serve
    Plate each sweet potato boat with a portion of the cucumber salad on the side. Serve immediately while the potato and beef are still warm, contrasting with the cool, crunchy salad.

 

Notes

Sweet potatoes are rich in fiber, vitamins A and C, and potassium. They have a lower glycemic index than regular potatoes, making them a great “smart carb” option. The combination of lean beef, cottage cheese, and avocado provides a triple protein punch with healthy fats from the avocado. Hot honey has become increasingly popular as a condiment that adds both sweetness and heat to dishes, and can be easily made at home by infusing honey with chili flakes.
