Ingredients
-
Base: 1 cup plain Greek yogurt, 1/2 cup natural peanut butter
-
Sweetener: 2 tablespoons honey
-
Swirl: 1/4 cup dark chocolate (melted)
Instructions
-
Mix Base: In a medium bowl, combine the Greek yogurt, peanut butter, and honey. Stir until the mixture is completely smooth and thick.
-
Melt Chocolate: Melt the dark chocolate in the microwave in 20–30 second intervals. Stir until smooth and let it cool slightly (it should still be pourable).
-
Create Swirl: Add small spoonfuls of the melted chocolate into the yogurt mixture. Use a toothpick or knife to gently swirl the chocolate to create a marbled effect—do not over-mix!
-
Shape: Spoon the marbled mixture into silicone molds or drop rounded portions onto a parchment-lined tray.
-
Freeze: Place in the freezer for at least 2–3 hours, or until the bites are fully firm.
-
Serve: Remove from molds and enjoy immediately. Keep leftovers in an airtight container in the freezer.
Notes
-
Texture Tip: Using Full-Fat (5%) Greek Yogurt will result in a much creamier bite with fewer ice crystals than non-fat yogurt.
-
Peanut Butter: If using “natural” peanut butter, make sure it is well-stirred so the oil is fully incorporated before measuring.
-
Storage: These are best eaten within 2 weeks for the freshest taste, as they can eventually pick up “freezer smells” if left too long.
