  • 1 cup Bisquick baking mix
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven: Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin thoroughly. This prevents the muffins from sticking and ensures easy removal after baking. A non-stick cooking spray works well, but you can also use butter or oil applied with a pastry brush.
  2. Cook the sausage: Cook the sausage in a skillet over medium heat, crumbling it as it browns. Drain excess grease. Breaking the sausage into small pieces while cooking ensures even distribution throughout the muffins. Removing excess grease prevents the muffins from becoming too oily.
  3. Mix the ingredients: In a large bowl, whisk the eggs until smooth. Stir in cooked sausage, shredded cheddar, and Bisquick. Mix until just combined. Overmixing can make the muffins tough, so stop mixing once all ingredients are incorporated.
  4. Fill the muffin tin: Spoon mixture into muffin tin, filling each cup about two-thirds full. This allows room for the muffins to rise during baking without overflowing.
  5. Bake the muffins: Bake for 20 minutes or until tops are golden and a toothpick inserted comes out clean. The golden color indicates proper browning, while the toothpick test ensures the centers are fully cooked.
  6. Cool and serve: Let muffins cool slightly in the tin, then remove and serve or store. Cooling for 5-10 minutes allows the muffins to set up and makes them easier to remove from the tin.

Notes

  • These muffins freeze exceptionally well. Cool completely, then wrap individually in plastic wrap and store in a freezer bag for up to 3 months. Reheat in the microwave for 30-45 seconds. You can customize these muffins by adding diced bell peppers, onions, or different cheese varieties. For a healthier version, use turkey sausage and reduced-fat cheese.
