Instructions

  1. Prepare the oven and dish: Preheat oven to 180°C (350°F) and thoroughly grease a baking dish. Make sure all corners and sides are well-greased to prevent sticking, as the finished pudding will be very moist.
  2. Mix dry ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking soda, and salt. Whisk these ingredients together until they’re evenly distributed to ensure even leavening throughout the pudding.
  3. Combine wet ingredients: In a separate bowl, whisk together the mashed ripe bananas, milk, eggs, melted butter, vanilla extract, and vinegar until smooth. The vinegar is essential as it reacts with the baking soda to help the pudding rise and create its distinctive texture.
  4. Create the batter: Pour the wet ingredients into the dry ingredient mixture and stir until just combined. Be careful not to overmix; a few small lumps are fine as overmixing can make the pudding tough.

  8. Serve: As soon as the pudding comes out of the oven, pour the warm sauce evenly over the hot pudding. Allow it to stand for about 5 minutes so the sauce can soak in before serving.
