Ingredients

Carrot Puree: 12 ½ oz carrots (peeled/chunked), 2 tbsp salted butter.

Dry Ingredients: 1 ½ cups flour, 1 ½ tsp baking powder, 1 ½ tsp cinnamon, ¼ tsp cardamom, pinch of cloves.

Wet Ingredients: 1 cup salted butter (divided), 2 cups light brown sugar, 2 tsp vanilla, ½ tsp kosher salt, 2 eggs + 4 egg yolks.

Mix-in: ¾ cup toasted chopped pecans.

Cream Cheese Swirl: 8 oz cream cheese, ½ cup sour cream, 2 tbsp granulated sugar, 1 tsp vanilla, 1 egg.
Instructions

Prep: Preheat oven to 350°F. Grease a 9×13 metal pan, line with parchment (leave an overhang), and grease the paper.

Puree: Steam carrots until very tender (20–25 mins). Puree while hot with 2 tbsp butter until smooth. Set aside to cool.

Brown Butter: Melt 12 tbsp butter in a saucepan over medium heat. Cook until golden brown and nutty (5–6 mins). Remove from heat, stir in remaining 4 tbsp butter until foaming stops. Whisk in brown sugar, vanilla, and salt. Cool to room temperature.

Cheesecake Mix: Whisk softened cream cheese, sour cream, granulated sugar, vanilla, and egg until smooth.

Combine Batter: Whisk cooled carrot puree into the brown butter mixture. Whisk in eggs and yolks. Fold in dry ingredients, then the pecans.

Layer & Swirl: Spread half the carrot batter in the pan. Dollop half the cream cheese mix on top and swirl with a knife. Cover with remaining carrot batter, top with the rest of the cream cheese, and swirl again vigorously.

Bake: Bake for 30–35 minutes until a toothpick comes out with just a few crumbs. Cool completely in the pan on a wire rack before lifting out and slicing.

The Puree Advantage: Steaming and pureeing the carrots instead of grating them gives the bars a uniform, velvety crumb and a more concentrated sweetness.

Egg Yolks: The extra 4 egg yolks are the secret to that “melt-in-your-mouth” fudgy consistency. Don’t skip them!

Storage: Because of the cream cheese swirl, these bars are best stored in the refrigerator. They actually taste even more fudgy the next day once the brown butter has fully set.
