- 1/2 cup heavy cream, chilled
- 12 ounces fresh raspberries

- Whip the Cream
- Fit a stand mixer with the whisk attachment. Pour the chilled heavy cream into the mixing bowl and add 1 teaspoon of granulated sugar. - Combine Berries and Cream
- Place the fresh raspberries in a heat-safe serving dish or individual ramekins. Gently fold in the freshly whipped cream using a spatula, being careful not to crush the delicate berries. Distribute the mixture evenly across your serving dish(es).
- Apply Sugar Layer
- Sprinkle the remaining 3 tablespoons of granulated sugar evenly over the top of the berry and cream mixture. Work in sections to ensure an even coating across the entire surface, which will create the signature brûlée crust.
- Caramelize the Sugar
- Using a kitchen torch, carefully heat the sugar in sections until it melts and turns a golden amber color. Hold the torch a few inches from the surface, moving it continuously to prevent burning. Focus on one area before moving to the next to ensure even caramelization.
- Set the Crust
- Once the entire surface has been caramelized, place the dish in the freezer for 5-10 minutes. This quick chill helps the sugar harden into a perfect crackling crust while keeping the cream and berries cool and refreshing beneath.
- Serve
- Remove from the freezer and serve immediately. For an extra-special presentation, accompany with slices of pound cake or angel food cake on the side.
