Baileys Brownies

Decadent Baileys Brownies featuring rich chocolate brownies topped with a silky Baileys-infused buttercream and finished with a glossy chocolate ganache – the perfect adult dessert that combines the beloved flavors of chocolate and Irish cream.

  • Total Time: 2 hours 45 minutes (including cooling and setting time)
  • Yield: 16 brownies 1x

Ingredients

Scale

Brownies

  • 1 box brownie mix
  • Ingredients listed on the box (typically eggs, oil, and water)

Baileys Buttercream

  • ½ cup salted butter, softened
  • 1 teaspoon vanilla extract
  • 2½ cups powdered sugar, sifted
  • 2 tablespoons Baileys Irish Cream
  • 3 to 4 tablespoons heavy whipping cream

Ganache

  • ⅓ cup heavy whipping cream
  • 2 tablespoons Baileys Irish Cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Prepare and Bake the Brownies
  2. Preheat the oven according to the brownie box instructions. Line an 8×8 square baking pan with parchment paper, leaving overhang on the sides for easy removal later. Mix the brownie batter according to package directions. For enhanced flavor, consider substituting the water with ¼ cup Baileys Irish Cream. Pour the batter into the prepared pan and bake according to package instructions. Allow the brownies to cool completely before adding the buttercream layer.
  3. Make the Baileys Buttercream
  4. In a mixing bowl, beat the softened butter, vanilla extract, and sifted powdered sugar until well combined. With the mixer running at low speed, pour in the Baileys Irish Cream. Gradually add the heavy whipping cream, one tablespoon at a time, while continuing to beat until the frosting becomes light, fluffy, and smooth. The consistency should be spreadable but firm enough to hold its shape.
  5. Apply the Buttercream Layer
  6. Once the brownies have completely cooled, use an offset spatula to spread the Baileys buttercream evenly across the top surface. Ensure the layer is uniform in thickness. Place the frosted brownies in the freezer for about 10-15 minutes to set the buttercream while you prepare the ganache topping.
  7. Prepare the Chocolate Ganache
  8. In a heatproof bowl, combine the heavy whipping cream and Baileys Irish Cream. Microwave for 45-60 seconds until the mixture just begins to simmer. Do not allow it to boil. Place the chocolate chips in a separate bowl and pour the hot cream mixture over them. Let this sit undisturbed for 3-4 minutes to allow the chocolate to melt. Then, stir gently until a smooth, glossy ganache forms.
  9. Finish the Brownies
  10. Remove the brownies from the freezer and immediately pour the ganache over the buttercream layer. Use a spatula to spread the ganache evenly across the surface. Allow the ganache to set either at room temperature for 45-60 minutes or in the refrigerator for about 15 minutes. Once set, lift the brownies from the pan using the parchment paper overhang, cut into squares, and serve.

Notes

  • For a stronger Baileys flavor, you can add an additional tablespoon to the buttercream or ganache.
  • The brownies can be stored in an airtight container in the refrigerator for up to 5 days.
  • For cleaner cuts, run your knife under hot water and wipe dry between slices.
  • These brownies freeze well for up to 3 months if wrapped tightly.
  • You can substitute the Baileys with non-alcoholic Irish cream flavoring if serving to children or those who don’t consume alcohol.
