Seeds: 200g Sesame seeds (untoasted or lightly toasted)

Sugar Base: 80g Granulated sugar

Liquid Gold: 100g Honey

Citrus: 1 tbsp Lemon juice, Orange zest (to taste)
Instructions

Syrup Base: In a non-stick pan, combine the sugar, lemon juice, and honey.

Flavor: Add the finely chopped orange zest (ensure you only use the colored part of the skin to avoid bitterness).

Boil: Bring the mixture to a boil without stirring. Watch closely; as soon as the mixture begins to darken into a light amber, proceed to the next step.

Combine: Pour in all the sesame seeds at once. Stir vigorously with a wooden spoon for about 1 minute until a cohesive “dough” forms.

Flatten: Carefully pour the hot mixture onto a sheet of parchment paper. Top with a second sheet of paper and use a rolling pin to flatten it to a thickness of 3–4 mm.

Shape: While still slightly warm but set, trim any irregular edges. Use a sharp knife to cut the sheet into 8 cm x 4 cm bars.

Set: Allow the bars to cool completely until hard and crunchy before serving.

Seed Prep: If your sesame seeds are raw, you can lightly toast them in a dry pan for 2–3 minutes before starting the recipe to enhance the nutty flavor.

Sticky Tip: Rub a little neutral oil on your knife before cutting the bars to prevent the honey mixture from sticking as you slice.

Storage: Store in an airtight container between layers of parchment paper at room temperature. They will stay crunchy for up to 2 weeks.
