For the Chai Cake:
- 180 g butter (room temperature)
- 150 g granulated sugar
- 150 g dark brown sugar
- 4 large eggs (room temperature)

- 1 tablespoon ground cinnamon
- 1 ½ teaspoon ground ginger
- ½ teaspoon ground allspice
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground black pepper
- ¾ teaspoon baking powder
- ¾ teaspoon baking soda
- ½ teaspoon salt
- 240 g sour cream (room temperature)
- 60 g vegetable oil (e.g., canola oil)
- 1 ½ teaspoon vanilla extract
For the Brown Sugar Cream Cheese Frosting:
- 200 g butter (room temperature)
- 280 g powdered sugar
- 30 g dark brown sugar
- 115 g full-fat cream cheese (room temperature)
- ½ teaspoon vanilla bean paste
Instructions
1. Preparing the Cake:
- Preheat your oven to 170ºC (340ºF) and line two 8-inch (20 cm) baking pans with parchment paper.
- In a bowl, sift together the flour, cornstarch, and all spices. Set aside.
- Using an electric mixer, cream the butter, granulated sugar, and brown sugar for 3 minutes until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Gradually add half of the flour mixture, mixing on low speed.
- Add the sour cream, vegetable oil, and vanilla extract, mixing until just combined.
- Stir in the remaining flour mixture, ensuring not to overmix.
- Divide the batter evenly between the prepared cake pans and bake for 28-30 minutes.
- Allow cakes to cool in the pan for 5 minutes before transferring them to a cooling rack.
2. Making the Frosting:
- Sift the powdered sugar and set aside.
- In a stand mixer, cream butter, powdered sugar, and brown sugar for 3 minutes until fluffy.
- Add vanilla bean paste and cream cheese, mixing on low speed until fully combined.
- Beat the frosting by hand to remove any air bubbles for a smooth finish.
3. Assembling the Cake:
- Trim the tops of the cakes to create flat layers.
- Place one cake layer on a serving plate and spread frosting evenly.
- Add the second cake layer and apply a thin crumb coat.
- Decorate with cinnamon dust, star anise, and cinnamon sticks.
