3 tablespoons unsalted butter

2 lbs sirloin beef tips, cut into bite-sized pieces

1/2 cup all-purpose flour

1 medium white onion, diced

8 oz cremini mushrooms, sliced

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1 tablespoon Worcestershire sauce

1 tablespoon beef bouillon paste (or 1 cube, crushed)

2 cups beef stock

1 bay leaf

1/4 cup sliced pepperoncinis (optional, for mild heat)

2 tablespoons cornstarch

2 tablespoons cold water

Kosher salt and freshly ground black pepper, to taste
Instructions
Prepare the Beef:
Season beef tips generously with salt and pepper. Toss in flour until all pieces are well coated.
2. Sear:
In a large skillet over medium-high heat, melt the butter. Add beef tips in batches, searing until browned on all sides (about 2-3 minutes per batch). Remove and set aside.
3. Sauté:
In the same skillet, add the diced onions. Cook for 3–4 minutes until softened. Add mushrooms and cook another 5 minutes.
Slow Cooker Instructions
4. Assemble in Slow Cooker:
Transfer the seared beef, onions, and mushrooms into your slow cooker. Add garlic powder, onion powder, thyme, rosemary, Worcestershire sauce, beef bouillon, beef stock, bay leaf, and pepperoncinis.
5. Cook:
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until beef is tender.
6. Thicken:
In a small bowl, mix cornstarch with cold water to create a slurry. Stir into the slow cooker. Cook uncovered on high for another 15–20 minutes until the gravy thickens.
Instant Pot Instructions
4. Pressure Cook:
After searing and sautéing, return beef, onions, and mushrooms to the Instant Pot. Add garlic powder, onion powder, thyme, rosemary, Worcestershire, beef bouillon, beef stock, bay leaf, and pepperoncinis.
5. Seal & Cook:
Lock the lid and set to Meat/Stew or Manual on High Pressure for 35 minutes. Let pressure release naturally for 10 minutes, then quick release remaining pressure.
6. Thicken:
Turn on sauté mode. Mix cornstarch and cold water into a slurry and stir into the pot. Simmer until gravy thickens, about 3–5 minutes.
