- 2 3/4 cups milk
- 1/3 cup sugar

- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1/4 tsp nutmeg
- 1/2 cup raisins
- Cinnamon (for sprinkling)
Instructions
- Preheat the oven to 350°F and butter a 1-quart baking dish.
- In the prepared dish, combine the Minute Rice, milk, sugar, butter, salt, vanilla, nutmeg, and raisins.
- Bake the mixture in the oven for 1 hour, stirring after the first 15 minutes.
- Once done, stir the pudding again and sprinkle with cinnamon.
- Serve warm or chilled. The pudding will thicken as it cools.
Notes
- You can substitute whole milk with coconut milk or almond milk for a dairy-free version.
- For added flavor, consider mixing in other spices like cardamom or allspice.
- If you prefer, replace raisins with dried cranberries, apricots, or dates.
- Rice pudding thickens after cooling; feel free to add a splash of milk before serving to loosen it.
