Crust:
- 1 1/2 cups graham cracker crumbs

Instructions
1. Prepare the Crust
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, mix the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture evenly into the bottom of the prepared pan to form a crust. Set aside.
2. Make the Filling
- In a large mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar together until smooth and creamy.
- Add the eggs, one at a time, beating well after each addition.
- Mix in the vanilla extract and sour cream until fully combined.
- Stir in the 1/2 cup of caramel sauce until incorporated.
3. Assemble the Cheesecake
- Pour half of the cheesecake batter over the prepared crust.
- Spoon the apple pie filling evenly over the batter.
- Drizzle with extra caramel sauce.
- Pour the remaining cheesecake batter over the apple pie filling layer.
4. Bake
- Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly browned.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour. This helps prevent cracking.
5. Chill
- Once the cheesecake has cooled to room temperature, refrigerate for at least 4 hours, or preferably overnight, to allow it to set completely.
6. Garnish and Serve
- Before serving, garnish the cheesecake with chopped apples, crumbled graham crackers, and a drizzle of extra caramel sauce.
- Slice and enjoy!
